A RENOWNED North Yorkshire chef has today launched a BBQ Box available nationwide every Friday throughout the summer.

Michelin-starred chef Tommy Banks launched his Made in Oldstead food box venture to safeguard jobs after the lockdown forced the closure of his restaurants, Roots York and Black Swan at Oldstead and from Friday, May 28 (Bank Holiday weekend) he starts delivering his BBQ Boxes.

Available to pre-order online now, the menu makes use of the produce from the Banks’ farm and kitchen garden in Oldstead, and shines a light on Tommy’s creative culinary ethos, championing his Yorkshire roots and the beauty of British produce. The box, designed to be finished off on your BBQ or grill at home, features three main dishes, dessert, sides, condiments and easy-to-follow instructions.

Mains include; Slow-Cooked Short Rib (brined and cooked for 12 hours before being brushed in a black garlic and fermented honey glaze); Black Garlic Glazed Beef Brisket (brined and slow cooked for 12 hours and ready to be finished off on the grill at home - beautifully tender and succulent) and Croup Steak. Add-ons (£12) are also available and include; Chicken wings dressed in coal oil and sprinkled with wild garlic and vinegar seasoning, lemon verbena and roasted garlic mayonnaise as well as Beef cheek brined in The Black Swan’s ‘Slocken’ beer and slow cooked for 12 hours.

Side dishes will feature; Macerated tomatoes; Charred baby gem lettuce served with toasted sunflower seeds; White cabbage kimchi; Roasted potatoes tossed in a hay-infused oil and Shredded pickled cucumber made from The Black Swan’s 2020 cucumber harvest.

Condiments have also been considered as carefully as the rest of the menu, with a Beetroot BBQ ketchup made with Oldstead farm beetroot; Chimichurri featuring seasonal herbs including lovage and chervil from The Black Swan kitchen garden; Fermented sweet chilli sauce made with Oldstead peppers and Minted crème fraiche. To finish, a strawberry and elderflower cheesecake.

Customers ordering from Made in Oldstead can add to their order with The Black Swan’s pre-bottled 500ml cocktails. The latest flavours are suitably summerlike, Rhubarb ‘Negroni’, Buck Fizz plus a Crab Apple ‘Bellini’ available individually (from £48). A selection of wines and beers are available too, including The Black Swan’s own English sparkling wine, made exclusively for the restaurants by Charles Palmer.

Earlier this year Roots in Marygate was awarded a Michelin star in this year's prestigious Michelin Guide.
