TODAY (Saturday) something very, very special is happening in Malton. It’s not a market (that’s on Saturday, October 14), it’s not a festival (yes Malton has several of those) - this is even more exciting.

Today, Florian Poirot, “Master Patissier” (pastry chef) is opening his own boutique in Talbot Yard Food Court.

Is this the same Florian Poirot who won the 2015 UK Pastry Chef of the Year award, you may ask? The same artisan who won the title Yorkshire Chef of the Year or, as a younger man, even won the macaron competition of France. You’re damn right it is.

This pastry maestro, this French god of the culinary arts, will now be making and selling all of his sweet treats in Malton, Yorkshire.

So what have the people of Yorkshire got to look forward to when Florian’s doors swing open?

Florian is going to keep things simple with three delectable options - macarons, chocolates and desserts. Already I can hear the moans. How do we choose, which do we go for? My advice is try ’em all.

Florian grew up in a small village near Nancy in North Eastern France where his grandfather was the village baker.

At the age of a six, Florian would help his grandfather with the bread, croissants and pastries and it quickly turned out to be his life’s passion. By the time Florian was seven he already knew that he wanted to be a pastry chef himself.

Florian perfected his art in the nearby town of Nancy achieving a patissier diploma then a Masters before Paris called and he was working for some of the most famous names in the French capital.

It wasn’t long though before he moved to another capital of the food world (Yorkshire, of course), working as one of Nestle’s top development chefs in York.

A few years later, Florian set up his own macaron business with a stall at the Malton market and here we are five years on and now he has his very own Talbot Yard shop, which opens on Saturday.

What makes me excited is that Malton is now able to offer a home to true artisans like Florian.

FP Macaron is opposite Groovy Moo Gelato and a little bird told me Florian’s already experimenting with a gin and tonic flavoured macaron with the help of his new neighbours from the Rare Bird Distillery.

I witnessed Florian taking some of his famous salted caramel macarons out of the oven yesterday and they looked, well - off the scale.

Whether it be macarons, chocolates or desserts I’m certain Florian’s flavours will thrill.

As always the philosophy of Talbot Yard and of Malton more generally, is that everything is made on site, with passion. So get to Malton this Saturday and try the delights on offer. Vive Florian Poirot and Vive Le Malton.
