Whitby smoked salmon to be served up in top London restaurant

SALMON roasted by a fish merchant on the North Yorkshire coast is to be served in one of London’s top restaurants.
Selfridges’ champagne and caviar bar menu will feature oak roasted salmon from Whitby Seafish, which has been based in Staithes for 20 years.
The restaurant became aware of the Staithes’ speciality salmon thanks to former local man James Coward, who is friends with one of the chefs.
During a trip back up north, hteh chef was impressed with the oak roasted salmon served up in a buffet prepared by James’ mother, who lives in East Barnby.
A supply of the salmon, which was shortlisted for a DeliciouslyYorkshire award for best fish and seafood product in 2011, was taken back to the capital.
Vicky Dixon, who runs the Staithes business with Matthew Asquith, said: “It is great news. The chef said he thought it tasted fantastic.
“We’re waiting to see what they will do with it and really are delighted to have some of our produce available in such a renowned restaurant.”
