JULIAN COLE this week bakes a tray of tasty flapjacks - with a twist or two

THE idea for putting salted peanuts in flapjack just came to me.

It’s probably occurred to others as well. The basic recipe will work without the peanuts or the raisins, but won’t be quite as good.

Other additions are possible.

Ingredients:

110g unsalted butter
One tablespoon of golden syrup
50g brown sugar
200g oats (not jumbo)
50g self-raising flour
100g raisins
100g salted peanuts

Pre-heat oven to 170C (maybe lower for a fan oven).

Warm the butter and syrup in a pan until melted together. Mix all the dry ingredients together and pour on the butter and syrup. Mix everything together.

Line a lipped baking tray with greaseproof paper. Pour in the mixture and spread evenly to the corners.

Cook for 15 minutes, but keep an eye on it: my first batch burnt a little.

Remove from oven, leave to cool slightly but cut while still warm, then leave to cool.

TIP: To make granola, leave out the sugar, cook for ten or 15 minutes, remove from oven and tip all the ingredients into a bowl.

Now add sugar and a squirt of honey. Place back in the oven. The granola won’t hold together, but it makes for a lovely cereal-style treat; good on natural yoghurt
